CAM is the acronym of Minimum Environmental Criteria, which are a set of requirements, stated in the Ministerial Decree of 24 May 2012 (with regulatory update of May 2017) which reduce environmental impact through the use of chemicals with an environmentally friendly life cycle.

It is a “self-control” in which it is necessary to eliminate at the base any risks related to food and, consequently, ensure excellent cleaning and sanitization conditions.
